- 1 cup cream cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup mushroom stems, chopped
- Salt and pepper to taste
- 1/2 cup shredded cheese (for topping)
### Cooking Directions:
- **Prepare mushrooms:** Clean the mushrooms and remove the stems. Finely chop the stems.
- **Make filling:** In a bowl, mix together cream cheese, sun-dried tomatoes, chopped mushroom stems, salt, and pepper.
- **Fill mushrooms:** Spoon the mixture into the mushroom caps.
- **Add cheese:** Top each mushroom with shredded cheese.
- **Bake:** Place the stuffed mushrooms on a baking sheet and bake at 200°C (about 400°F) until the cheese is melted, approximately 15 minutes.

- 2 tbsp oregano
- Salt
- Pepper
### Cooking Directions:
- **Prepare vegetables:** Finely chop the onion, carrot, celery, garlic, and chilies.
- **Sauté vegetables:** In a pot, heat olive oil over medium heat. Add the chopped vegetables and sauté for 3 minutes.
- **Add tomato paste:** Stir in the tomato paste and let it cook for an additional minute.
- **Add liquids and herbs:** Pour in the vegetable broth and diced tomatoes, then add oregano. Stir to combine.
