- For the chicken
- 1 tbsp vegetable oil
- 0.5 kg chicken, cut into pieces
- Salt
- Ground black pepper
- Toasted sesame seeds, for garnish
- Sliced scallions, for garnish
- Cooked white rice, for serving
- Steamed broccoli, for serving
- Sauce
- 1/3 cup reduced-sodium soy sauce
- 1 1/2 tbsp rice wine vinegar
- 1 tsp toasted sesame oil
- 1 1/2 tbsp honey
- 2 cloves garlic, minced
- 2 tsp finely minced or grated fresh ginger
- 1 1/2 tsp cornstarch
### Cooking Directions:
- **Make sauce:** In a medium bowl, whisk together soy sauce, rice vinegar, oil, honey, garlic, ginger, and cornstarch.
- **Make chicken:** In a large skillet over medium heat, heat oil. Add chicken to skillet and season with salt and pepper. Cook until golden and almost cooked through, about 10 minutes.
- Pour sauce over chicken and simmer until sauce has thickened slightly and chicken is cooked through, 5 minutes.
- Garnish with sesame seeds and scallions. Serve over rice with steamed broccoli.

### Ingredients:
- The Beef
- 400 g beef tenderloin
- 1 ss soyasaus
- Salt & pepper
- Oil
- Chili sauce
- 1 red chili, finely chopped
- 1-2 cloves of garlic, finely chopped
- 1 pinch salt
- 3 tsp brown sugar (to taste)
- 3 tbsp lime juice (to taste)
- 1-2 tbsp Asian fish sauce (to taste)
- 2 tbsp water
- The Salad
- 150 g rice noodles
- 1 courgette or any other salad, finely chopped
- 1 small red onion, in thin strips
- 1 mango, in strips
- 1 cucumber, in "crescents"
- 1-2 carrots, in strips
- 2 radishes, thinly sliced
- 10 cherry tomatoes, halved
- fresh coriander, roughly chopped
- fresh mint, roughly chopped
- 5 tbsp peanuts (unsalted)
- 1 lime, in boats
### Cooking Directions:
- Cut the meat in half so that you have two thick, evenly sized steaks. Brush the meat with soy sauce and season with salt and pepper. Fry in a hot frying pan with neutral oil, 2-3 minutes on each side. Remove the meat from the frying pan and let it rest while you prepare the rest of the salad. Just before serving, cut the steaks into thin slices.
- Put chilli, garlic, salt and sugar in a mortar and pound it to a mash. Add the other ingredients and taste until you find a nice balance between the sweet, salty and sour. (Alternatively, you can make the chili sauce with a stick blender or similar.)
- Cook the rice noodles according to the instructions on the package, rinse them in cold water and let them drain.
- Cut up the ingredients for the salad as indicated and place them in a wide, shallow bowl. Then add the rice noodles, coriander, mint and half of the chilli sauce and gently toss the salad together. Spread the meat on top of the salad and then sprinkle the chopped peanuts over. Serve the rest of the chili sauce and lime wedges as a side dish

- 1-2 jalapeños
- Optional
- Chopped scallions (for garnish)
- Fresh cilantro (for garnish)
- Diced avocado (for garnish)
- Pickled Red Onions (for garnish)
- Olive oil
- 1 large white or red onion, chopped
- 3 garlic cloves, or to taste, minced
- 2 15oz cans of beans, drained. Use whatever but a combo of black + red kidney is my favorite.
- 1 28 oz can diced tomatoes or whole tomatoes smooshed with a potato masher
- 1-2 finely chopped chipotle pepper(s) in adobo sauce + some of the sauce.
- Optional
- 1 tbsp of vodka or whiskey
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp harina maseca
- Spices:
- 2 tbsp chili powder, plus more to taste
- 1 tbsp dried oregano, plus more to taste
- 2 tsp freshly ground cumin
- Kosher salt
- Freshly ground black pepper
### Cooking Directions:
- Heat up a couple of tablespoons of oil on medium high heat. Add in onions and a pinch of salt; cook until translucent. Add in garlic, let cook for a minute or two. Add in chipotle, oregano, chili powder, cumin, black pepper and let cook for another minute or two.
- Add in tomatoes, beans and optionally the soy sauce, vinegar, whiskey, and maseca. Stir and let simmer for 25 minutes or so to let the flavors meld together.
- Taste and adjust salt/pepper to your liking. Add in liquor and apple cider vinegar if you have it.
- Serve with garnishes like pickled red onions, diced avocado, fresh cilantro, and/or your favorite tortilla chips.

- 1 teaspoon ground cumin
- ½ teaspoon ground cinnamon
- ½ teaspoon ground turmeric
- ¼ teaspoon ground coriander
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 2-lb. head cauliflower, cut into florets (6 cups)
- 1 15-oz. can no-salt-added chickpeas, rinsed, drained, and patted dry
- ¼ cup tahini
- ⅛ teaspoon cayenne pepper
- 2 cups hot cooked brown rice
- 1 medium cucumber, halved lengthwise and thinly sliced (2 cups)
- 2 medium bell peppers, any color, cut into bite-size strips
- ½ cup slivered red onion
- Fresh cilantro leaves
- Lemon wedges
### Cooking Directions:
- Preheat oven to 220°C. Line a large rimmed baking sheet with parchment paper. In a large bowl stir together ¼ cup of the lemon juice and the next nine ingredients (through black pepper). Add cauliflower and chickpeas; stir to coat. Spread evenly in prepared baking sheet. Roast 35 minutes or until cauliflower is browned on edges, stirring once.
- In a small bowl stir together tahini, the remaining 2 tablespoons lemon juice, the cayenne, and 3 to 4 tablespoons water. In bowls arrange rice, cauliflower mixture, cucumber, pepper strips, and red onion. Drizzle with tahini mixture. Sprinkle with cilantro leaves and serve with lemon wedges.
